Plugging the by-pass hose pros and cons

The by-pass hose is to keep the water flowing thru the motor while the thermostat is closed to keep from getting hot spots. If the water was not flowing in the motor can you imagine how hot the water will get in the head above the combustion chamber, too hot. You have to keep the water flowing, either with a by-pass with a thermostat or no by-pass but then you can only use an orfice in place of the thermostat.
