Holley 4175 power valve?

I am rebuilding a list 7855, 4175 Holley. It is going on a stock 75 318 with performer intake stock dual exhaust ,recurved distributor. The car is a 66 Dart GT, 3.55 suregrip, 4spd O/D. Car weighs less than 3000. The carb originally comes with 562 jets and a 2 stage power valve. I did some research and found a few articles recommending going to single stage PV and moving jets up a couple of sizes. Especially in a light car with decent power. I do want to keep the best economy to power ratio I can. Thanks..........
