Will this work on the street?

I have found a rebuilt 360 for sale(great deal), 030 over, about 11:1, roller rockers, and a Engle cam 557/575. My question is with the compression, should I worry about pump gas? I think the cam will be too much, I would go with something around the 268 or 272 Comp. If the compression is too high and I go with say thicker gaskets, now I am messing with the quench. This will be a real driver, I am concerned this may be more work than it is worth for the street. I am reasonably competent mechanically, but would love some advice.
