Measure the hole sizes and cross reference the sizes to the various carbs. Factory parts also normally have some sort of stamp on them.

Just an FYI The Chrysler, Dodge and Desoto valve covers are different sizes and do not interchange. So your valve covers are only desirable for someone with a 331, 354 or 392 size engines that came in Chrysler branded cars. or Marine, Industrial Chrysler engines.

You can always calibrate your own dipstick. Just follow the Factory Service manual recommendations for the amount of fluid to fill, either with or without the torque convertor. Follow leveling procedure, Mark the stick with a notch.

Get a dipstick. There are aftermrket avaiable if you have a different setup. If you don't have a dipstick, what do you have ? Your question is meaningless unless we know what your point of reference is. Factory measurement is on a level surface, operating temperature, in neutral. 1 pint down.

Just remember that any bore sighter is just a " get it cloe" device. Bullets unfortunately do not follow a straight line. More of a corkscrew. Your optics need to bee of the best quality to get the best results/comfort. Eye relief, clarity of the reticle, parallax etc...

Need correct Radiator, shorud, Fan clutch, fan, thermostat housing, Properly setup the kick down linkage ( the rod should be forward at idle not in the back of the slot ) .Really, Get out the service manual and see what else is wrong. If you do it right you will only have to fix it once.

Just me, Never use critical torqued bolts over. Why ? The fastener is probably the most imporatnt part needed to properly attain and maintain proper torwue for sealing. Why did you go with aluminum heads ? Cast iron are cheaper. Like new racing tires and using the old valve stems.
