Great Recipe For Your Next GameDay Party

Sorry, too late for News Years Day games, but here's a really good recipe for your next gameday party:


"Gringo" Dip or Burrito Filling

2 30-oz canned Refried Beans (your preference on style)
1 16-oz bottle Salsa (your 'heat' preference)
2 12-oz canned Roast Beef (reserve gravy)
1 10-oz can Enchilada Sauce (Red or Green, your preference)
1 4-oz can Diced Green Chilis (drained)
1 2-1/4 oz can slice Olives (drained)
1 pound Pepper Jack cheese
1 pound Extra Sharp Cheddar cheese


Drain the individual cans of Diced Green Chilis and Sliced Olives.

Add the Refried Beans, Salsa, Enchilada Sauce, Diced Green Chilis, and Sliced Olives to a large bowl. Shred the canned Roast Beef by hand and add to the mix (reserve any gravy for your pets)

Shred both the Pepper Jack and Extra Sharp Cheddar Cheese and add to the mix

Stir mix to blend all ingredients

Microwave on 'High' for 10 minutes. Stir mix to blend well. Microwave on 'High' for another 10 minutes.

Great as either a Dip with your choice of chips, or as filler for a Burrito

Enjoy with your choice of beveridge

This recipe is fairly 'mild' for those not used to Mexican food. Adjust the 'heat' either up or down to your preference the next time you make this.

Note: The "Gringo" came about years ago when I made this to take into my work for a party. One of our Hispanic workers asked me, "Who made the dip?"
I told him I did. He looked at me and said, "Pretty good job for a 'Gringo'"
So, "Gringo Dip" it is.
