Had plenty of eggs, but no milk. Was feeling too lazy to walk across the street to the Mom & Pop store.
At first, decided to substitute water, until I remembered an unopened natural yogurt (with granola) in the fridge. Used 3 tablespoons of the yogurt along with a little water, the egg, and pancake batter. Turned out pretty tasty. I use melted butter and honey as a topping, since the syrups out there now seldom contain any real maple syrup (and my apiarist brother-in-law has bee hives).
