How to tell if pressure plate is weak

I have a centerforce DF clutch in my 67 Dart. How can I tell if the centerforce pressure plate is weak or not built correctly? Something has not been right since day 1.

Things I have checked are:
1. Clutch pedal has 5 1/4" pin spread
2. Pedal measures 7" from carpet to top of pedal pad.
3. 14 1/4" rod from pedal to Z bar.
4. Z bar is like the on in this link, Z-bar measurements please!
5. I have the 734 bellhousing with the correct ball stud bracket. Brewer's Performance - Mopar A833 4-Speed Transmission and Component Specialists
6. Z bar is level. So is adjuster rod going from Z bar to fork
7. Disc air gap is .035" with pedal on the floor and no slack between the throwout bearing and pressure plate.
8. If I keep adjusting the rod I can get more air gap. I got it up to .060" with the pedal on the floor. Of course I can't run it this way, just experimenting.

Sometimes you have to alter the pedal ratio of the finger ratio of the pressure plate you are using now than what came on the car.

The pressure plate I use had Long style fingers, and they are not OE Long style levers.

If I didn't slow the pedal down I could run almost 2 inches of free play and still have the fingers hit the disc.
