Minion Ring Weber kettle grill

I want to grill a pulled pork at the end of october. Almost everything is clear, but my fear is i cant reach the temperature in case of the cold weather of 50° F or lower. How many rows of Weber brikets do you recommend?
Most videos shows a 3 rows minion ring, but at much warmer weather, i think.

Cook it on your Weber for up to three hours and then take it off and finish it in your oven or crock pot with a cup of apple juice until it is tender enough to shred. I've never had a complaint.
