I have a 440 from a motor home with the coolant loops in the block for the spark plugs. To my surprise, the Fel-Pro kit from Summit came with head gaskets that had the holes already. I'm going with 440 Source heads on it, so will these head gaskets be okay since the new heads don't have the coolant loops? Or do I need to get gaskets without the holes in them? Any help is appreciated!

Your Felpro 8519PT1 gasket is a universal application fit. Has the 2 extra holes per cylinder needed in the event that it's used with a "Motor home" block/ cylinder head combo. All other applications do not have these holes drilled, Don't be concerned, use what you have.
Things to watch out for with a motor home engine is the balancing of the crank, is it a cast iron unit, is it a heavy con rod (aka 6 pac rod) engine, maybe you know all this already. Stock "LY" to the left and some motorhome to the right.
