I'm putting a motor together that will have a slightly radical idle, and I know that it can cause issues when running an automatic transmission. To help alleviate some of the problem I want to install a convertor with a slightly higher stall speed than the stock convertor. I'm thinking something that will stall around 2500-3000 RPM. What problems might that create that I haven't considered?? Convertor slippage when driving on the highway?? I'll have 3.91 rear gears.

If you get a custom converter built for your specs then slippage shouldn't be an issue. A cheaper off the shelf unit then it is possible.
Other than having a good transmission cooler you should be ok.
