We have a Traeger smoker, and we use it a lot. I make the best ribs around. Anyway, I have been wanting to try making my own pastrami for a long time. I did some research and found out that pastrami is basically like a corned beef brisket only with different spices Found a good recipe video on YouTube, and I followed it. Basically, you take a corned beef brisket and soak it in water for eight hours, changing the water every two hours, to get rid of the salt. Then you put a rub on it and smoke it for three hours, and then steam it in your smoker in an aluminum pan with foil over it and a little water for two hours. It is amazing. Damn, that looks killer. Add some mustard, onion, and pepperoncinis on a toasted ciabatta roll and I'd be in heaven.
Spicy mustard of course. And I do love pepperoncinis. I lived in Rancho Cordova for five years while in the USAF. 1994 while I was going to Navigator school (Mather AFB) and then 77-81 as a Navigator instructor. We LOVED the area. In 1979, we bought a house at 3731 Station Street near Mather for $50K. We sold it two years later for $75K. I wonder what it is worth now. My wife went to the Sunrise Mall several times a week. Is it still open?
