We have a Traeger smoker, and we use it a lot. I make the best ribs around. Anyway, I have been wanting to try making my own pastrami for a long time. I did some research and found out that pastrami is basically like a corned beef brisket only with different spices Found a good recipe video on YouTube, and I followed it. Basically, you take a corned beef brisket and soak it in water for eight hours, changing the water every two hours, to get rid of the salt. Then you put a rub on it and smoke it for three hours, and then steam it in your smoker in an aluminum pan with foil over it and a little water for two hours. It is amazing.
