Depending on what you want to do with the car. My 68 Valiant 273 (Avatar photo) had 2.76.
If not doing much above 65 mph distance driving 3.55 or 3.73 will wake the 273 up a bit.
 
3.23 was factory standard for most applications. If you have a Commando, the power goes to 5200rpm, so you might benefit from a higher numeric ratio. The mileage will suck either way.

With tall tires and a 3.23 and driving it like I had a brain, I could get 18+ on the highway.
 
Depending on what body that the 273 is in, the 3.91 gear would be interesting if you could run a tall enough tire as to not be red lined at highway speeds. I ran 3.55's in my 67 273 4 speed Dart in the late 60's early 70's. I ran as tall of a tire as I could during the week because it was my DD. Friday afternoon, the short tires went on and I began cruising the streets looking for races.

I like the 355 4 gear the best for tooling around town and the winding country roads. The 411 car isn't finished yet (we are mini tubbing it...fiberglass hood and decklid no front bumper and other weight loss measures) but we did some hole shots and it's really quick with the 4 gear. If we go 30 miles or more the 323.
 
Went from 2.93 to 3.23 no major difference.
I went from 2.93s to a 3.55 sure grip. Didn't like the RPMs on the highway and switched down to 3.23 SG.

The 2.93s got 24mpg on the highway if driven nicely. The 3.55s got about 16mpg. The 3.23s get about 19mpg on the highway.

I do have a 2.93 sure grip stored away if I ever decide to switch back.
