Sometimes grade 5 ,is better than grade 8. This is one of those times. The higher a "grade bolt rating" goes up, tensile rating /hardness , gives up duration of lifespan, in trade for longevity. Not the proper analytics answer, it does exist.

Possibly 340. Depends on the bearing .I usually use,1" free play at the pedal. However,Richard Ehrenberg, quoted " newer bearings,don't need it". Myself,the 1" inch free play holds,if the clutch linkage, in proper operation. My .02 cents.

How about a button head/Allen head bolt? Might get you some clearance.
