From what it says in my 68 Dodge service manual- the 7 1/4 only takes 1 qt (2 pints) of fluid? is this true? seems like not enough to me can anyone confirm this for me?

That might be right. An 8-3/4 only takes 2 qts. and it's a lot bigger. Why worry anyway, fill it till it comes out of the fill plug and your there.

Well I found out the 7.5 I have has been rebuilt at one point and has good lube in it so I just cleaned the cover and siliconed it on...
