Besides the spool what do i need to change a dana 60 from 30 to a 35 spline rearend?

35 spline spool and axles should do the trick.

i don't need berrings? Will i have to shim it? Or just pop it out and put the ring gear on.

You will need to do everything you would normally do with a gear change. Below are some examples of what is required.

If you do not know how to set up gears, you may want to find someone locally who can help you with this. Yes, you will probably need bearings and seals. It does not make sense to tear down the D60 without changing these items. It is a $50 insurance policy.
