Electric Choke disable?

I have a good used Demon Street Demon 625 carb with electric choke. I am not a big fan of electric choke. Could the choke timer be left unhooked and will the air door stay open, or would I need to wire the air door open?

You could probably not connect the wires, and then "adjust" it so that the flap stays fully open...
