I'm curious as to what my engine is putting out at the crank.

1968 318 block and heads
268 crane cam
Edelbrock S1P1 Aluminum Intake
Holly 650 cfm carb (vac secondaries)
Don't know if these would make a difference but..
Hardened valve seats
Dual timing chain

What do you guys think?

230 should have been stock IIRC. So I'd say 260ish with soem age and speed parts?

It really really depends on how close your engine was to the published specs to start with. My 71 318 has an actual compression ratio of 7.5:1

I have a similar setup,
offenhauser intake instead,
same carb, holley red fuel pump,
stock everything else, pretty crap extractors an 2 inch exhaust,
it made 200hp at the wheels.

An i ran a 14.5 at 93 mph.

So you should be making something similar as long
as its running right.
Tuning is EVERYTHING.

Id say 260-265 at the crank, 190-200 at the wheels.

Run it at the track and see what time sufaces. I am guessing high 14s, low 15s, which make a very peppy street cruiser.
