Flat sheet metal or quarter patches?

never welded a day in my life, but dammit I'm going to learn! Question is I can afford the cheap goodmark lower quarters or I can just use sheet. Both rear lower quarters and in front of rear tire needs fixing. I'm going to use sheet at front of rear tires and backside of holes, but will it be difficult to achieve the rear quarter shape with sheet?

You can find crowned sheet metal at a wrecking yard. Door skins, roofs, hoods and trunk lids all have crowns in them. Gives you a good starting point.
