hardened valve seats

Having the head cut for 1.7 + 1.44 valves. engine builder says I should use 1.5 od x 3/32 thickness seats. the shop installing them thinks that's to thin and want to install .250" thickness. will cutting for .250 thickness hit or be too close to h2o jackets? what size exhaust seats have any of you used?
