this is actually why it doesn't really matter what you choose to do because unless you do this you'll never know which performs better. Same thing when guys stress over cams for 2 months. Unless youre willing to swap parts and test, you'll never actually know
Im building one right now, 360 + .030, KB107's, .509 Cam, mild ported 308 heads, probably air-gap intake, 750 double pumper. Not sure what it'll run, like mid-high 12's as I have street tires on a 70 duster with full interior and 3.91s.
Im with Moper, start with tuning. What is your cranking compression? What is your vacuum at idle? I dont think your carb is too big but if youre bogging and cant hardly get off the line then you dont have it tuned right. You should be able to stab the throttle without any hiccups, coughs, or...
Keep it a 4 speed! Put some good rods and pistons in it, throw some w2's up top, put in a solid roller, and let er rip! Worse case scenario, throw some bottle on it!
