engine is a 76 318 2 barrel carburetor

oil pressure at idle is 20psi on cold start up maybe 40. Is this normal

idles fast ( i have the idle set here to keep it running)

smells rich

carburetor has a plug covering the screw (preset from factory) not a big deal to remove the plug.

car has decent power

has quick dead spots upon acceleration (very quick) like its quickly accelerating in stages) This is the main problem i want to solve.
 
Not knowing mileage, oil pressure,
sounds like you have a well used engine,

possible vacumm leak, throw a gauge on it and see.
Possible carb dirt issues.
 
starts missing at around 2000 rpm on up. idle is fine what vacuum am i looking for at idle
 

Pull the caps off the idle mixture screws. Put a vacuum gauge on a fitting that gets manifold vacuum. Adjust the idle mixture for best vacuum reading. Check timing and idle speed settings. If the engine will not idle at about 750RPM with less than 20 degrees of timing, your vacuum gauge should be reading way low. If not, check the carb for problems. If the needle on the gauge is shaking, you may have larger problems.
