How can I tell if my 340 small block open chamber cylinder heads have factory hardened exhaust seats? The castiing number ends in 915 and they have 1.88 intake valves. Thank you.

Usually it;s 71 and up. That said, it;s really a moot point on older heads, because one good valve job can grind through the hardened surface since it is not very deep. Chances are as old as the heads are, the hardened surface is long gone.
