Randy's Ring 7 Pinion has a video of how to install a differential and set it up. They cover most types including mopar.
 
Do a search on "video" at http://www.ringpinion.com/, it's $14.64 and produced by Richmond Gear.

NOTE:
* You need a dial indicator to measure/set the backlash.
* You need an inch-lb torque wrench that you can measure ~20 in-lbs to set the preload on the pinion bearings if you are changing gears.
* You need a foot-lb torque wrench to torque the bearing caps and set the bearing preload on the carrier bearings.
* In order to set the carrier bearing preload and adjust the back lash you need a tool that will reach in from the end of the axle to the side adjusters. An old torsion bar will work or you can make something. Just need a square drive on one end to attach to your torque wrench and a 1.5" hex (I believe it's 1.5") to fit the hex drive on the adjusters.
* If you are changing the pinion you will need a way to hold the yoke while you crank on the nut to crush the crush sleave (May need to generate 250 ft-lbs or more). I used a pipe wrench but you could make a tool that bolts on.
