Thinner Head Gasket Question

I'll be assembling a 360 Magnum shortly here to drop in my '83 W150. This is my first time putting together an engine that didn't go into a motorcycle of some sort, so please bear with me.

What I've got:
junkyard 360 Magnum shortblock, re-using the stock cam
re-manufactured heads from Allied Motor Parts - these are supposed to be a complete stock replacement.
Stock valve train.

So, I want to bolt this together using the stock lifters, pushrods and rockers that came out of the engine. AND i'd like to use the thinner .028 head gasket 1x Graphite Head Gasket for Small Block Mopar - .028, cause why not bump up the compression a small amount.

I'm wondering if I'm safe to follow the steps in the book I have and just bolt this together. Or, do I need to be concerned about pushrod length, piston to valve clearance, or something else I'm not thinking of?
Any thoughts are welcome, TIA.
