Do I need to change to a different u joint when going from my 7.25 to a 741 case 8.75? If so, which u joint do I need to get?

Thanks in advance!

Only if it's a different size. Most A-bodies used the 7260 U-joint no matter what rearend it had. If the 741 was out of a B or E-body it may have the wider 7290 U-joint

there are 7260/7290 conversion yokes too. might need one.

Measure the outside to outside width of the u-joint on your drive shaft. 7260 joint measures 2 1/8". 7290 measures 2 5/8". If the inside measurement where your joint bolts up to the yoke is the same, your good to go. If you wind up with one of each measurement, you can use a conversion u-joint like a Neapco 11-726090.

Thanks to all, it was a straight across swap.
