Something I’ve been wondering about for years….

It's usually because of limited room to the inside, due to inner wheel tub interference, or springs.

That makes no sense to me. That has nothing to do with what offset is needed, only the axle width does.

If the tire fits, make the axle wider so the wheel fits.

I can kind of see the logic with a Duster and a stock axle though. The hips are wider to a degree than something like a Dart, and the axle width is fairly narrow. So fitting a wider wheel without changing the axle width would push the tire out and make the wheel deeper.

But if someone is working hard to build a sleeper, they can use a wider axle and more backspacing to make it look right. The inner wheel tub really has no bearing beyond what size tire fits.
 
If you want "sleeper" then you must consider keeping old paint, some dents, some rust.
Back in the bad old days I went as far as to request my machinist of choice (RIP Steve) to not hot tank my engine parts- after explaining why, he grudgingly agreed. When assembled, the engine had old flakey paint and often mismatched colors, and with an appropriate coat of grime liberally applied it looked like a tired "ridden hard and put away wet" engine. When potential victims checked it out at the Dog 'n Suds or the Red Barn it was dismissed pretty quickly as some wannabe.

In the mid 70s to mid 80s, my 65 Falcon Futura 289 4 speed, with I think early 60s 8¾ that had the tapered axle ends with the brake drum keyed and held on with a nut on the end, 4.10 with Super Stock springs and pinion snubber. Frame rails moved in with tubs. I never intended for it to be a sleeper. It originally had Magnum 500s but I didn't want to cut them so I bought Cragar SS 6" width and had them widened 3" to the inside. Goodyear Polyglas F70s on the front, L60s on the rear. Funny thing was, most people didn't realize how big the rear tires were until they read L60 on the tires. And then, I would get the questions "How the h*** did you get those on there? Air shocks?"
 

The problem I see with building a "sleeper," is the fact that just about any vehicle 25 yrs old, or older, is expected to have at least some work done to it. In that sense, just about every vehicle built in last 25 yrs has a near negative offset wheel. Tire width and wheel offset wouldn't be a problem as long as you could get it in the wheel well without issues.
 
If you really want to build a sleeper you need to redo the rear bumper brackets and add a heavy steel bar inside the bumper.

Traction will be an issue regardless of the size tire you use.

My 63 has 48%/ 52% front to rear bias thanks to a piece of 1" x 3" steel bar behind the bumper and two large batteries in the trunk.

You can't go forward if it won't plant the tires. Plus it's a lot easier than mini tubbing if you can't do the fabrication yourself.

A friend of mine had a 429 CJ in a 70 Fairlane wagon. He was not the original owner.
I have no idea how that combo came to be. Special order tow vehicle for someone with pull at ford?
He also owned a 71 454 Monte Carlo at one time. Just an LS5, not a 6
Sold both for a profit.
I bought a 69 CJ Ranchero from him. It was a dog.

My friend did the same, with two Novas.
One was obviously fast, so he asked if the victim, uh, competitor wanted to race his other one instead. Single exhaust, two barrel, tiny one snorkel air cleaner, three speed knob. Greasy dirty small block.
Was a 434, with a 500cfm 2bbl, air cleaner was opened up underneath where it couldn't be seen , 4sp trans with a bunch of gear in the back. 2 1/2 ram horn exhaust, nice pipes dumping underneath.
Won five times as much money with the sleeper than the fast car.
 
My dart 295/50/15 on 15x10 with 7.5bs mini tubbed/springs moved. I wanted a sleeper, i finished this car in 2006, and still have it. Built 400/727/8.75. The sound gives it away that it's not grandma's slant six car
