Today when I drove my truck(360 commando,750 eddy, eddy performer rpm, hedders etc) I was fishtailing and my motor started surging so I let up and all seemed okay anyone else have this problem with eddy carbs? Is there a fix?

If it's the 1411 electric choke Eddy 750 you may be alittle too lean. Try going smaller on the metering rods to richen it up. If it's the manual choke 1407 you should be OK as it's jetted fatter.

Also make sure you are using the correct metering rod springs for your engine vacuum per the manual.

If it happen only while fishtailing, the float levels could be off.

Not sure if spring loaded needle and seat assembly are standard, might not be..think that is just for off road--you were off public roads, right / well of course you were.

That may be the cure, replace both needles and seats with the spring loaded type and make sure the float levels are set right..likely to the off road carb specs if different.
