Old school Mopar senders are close to the same. That is, temp, fuel, oil if equipped, are same basic range. They are resistance, not voltage. Here is a tester photo somebody posted that shows low, med, high scale resistances THEY ARE NOT a linear curve

I can't help much with this but keep in mind it might be a shielding/ RFI/ EMI issue and or improper grounded/ ground loop. You have completely changed the system (and harness) from OEM, even though (I guess) you are using the OEM system components.

On a side note I do NOT understand the need for making systems such as this more and more complicated, nor do I understand why the manufacturers feel the need to incorporate such functions as VR into a module which may well cost over a thousand dollars on a fairly new vehicle.
