I am swapping a 318 to a 340. I am learning as I go . I would like motor and tranny to come out as one...is this the easiest way to go. I have removed the hood... should I remove the front grill and cross member also.

No need, just the radiator.
Do you have a Factory Service Manual?
I would pull the motor out first,tranny out second. This is a good way to start. No need to take out the grille.
The best way to install is from under the car, engine/tranny together.
Works slick as a whistle.
