choke thermastate issues 72 swinger

i have a 1972 dodge dart swinger. just put a new holley 2 barell carb. so when i step on it, its etches out and boggs way down. and i was wondering if it has to do with the choke thermostat controll or what if you have any ideas that would be great to let me know.
 
even after its warm its either that or it might be that the carb is not gettin enough fuel, but we have replaced pretty much everything except the tank and the fuell lines and weve messed with the idle thing and jets but still nothing. and today the choke stayed open when it was warm but it still bogged out and died when i steped on it. it almost glitches and catches up with its sewlf and then starts goin again it wierd.
 
yeah we re-did the timing and put a 4 barrel on there. it runs way smoother. got rid of the problem thanks.
