Engine Loads Up

There don't seem to be any words to use the search function that don't return 20,000 results regarding "loads of fun" "I give up" "Which engine should I build" etc. So if the answer is already posted I apologize.

I don't have a specific problem right now but in the past I have had engines that load up and dramatically impact my acceleration. So I would like to learn more in case my new 360 build starts doing it. My question specifically is what are the factors that causes an engine to load up and of course what are the typical remedies? Here is my setup that is just a few days from road worthy:

360 (1971 casting) 727 auto
mild cam 268 adv duration
stock crank .30 over, rods, pistons and valve train
MSD Blaster 2 coil, orange box
stock vacuum advanced dizzy
Accel 8mm wires
melling high vol oil pump
edlelbrock performer dual plane intake
edelbrock 1406 600cfm
heddman headers 2" exhaust
3.55 sure grip in an 8 1/4 housing
 
Initial Timing NOT advanced enough. Lazy Timing Curve..... Carb is not adjusted correctly after timing is set.

Timing first then adjust the carb and in that order only or you will chase your tail all day long.

Oh and JUNK the Edelbrock & Put a Holley DP on it!
