what do you guys time your cars with a 2 barrel at, with vacuum signal plugged? mine is on ported vac so I shouldn't really have to plug it.

Plug it. Its common practice.

my 360 had a stuck heat riser valve,and i was using water to test for leaks, it was boiling in middle intake valleys. Freed it up and its fine now.
 
If its a little rich,the water and soot are a telltale.
Head gaskets have specific symptoms,boiling over at highway speed,white exhaust and a very clean cylinder.
Or coolant in oil pan.
Lots of cars spit water on cold starts.

it definitely doesn't boil over or run hot, it ran at the bottom of the "healthy" window all week in 95 degrees!

There you go. Not a head gasket.
And coolant does evaporate some.
