Can someone tell me the difference between O HEADS & Z HEADS & valve size ?

There really is no difference in the design of the ports and chambers on any of the open chamber 340/360 sb head so they all have the same potential. All the these heads that came on 360's had 1.88 intakes and 1.60 exhaust. 340's initially came with 2.02 intakes and 1.60 exhaust then in the early 70's the 340s came with 1.88 intakes too.

Unless you are trying to do a correct restoration one verse another makes no difference.
