Holiday weekend food!

Why normally I would cook a Brisket, pork butt or ribs for a Holiday weekend. This Holiday we did a whole side of Mahi Mahi filet. The wife did an absolutely superb job of skinning and prep for blackening on the grill!! A 36” inch filet turned into a wonderful meal and all gone. We could not get enough!

We need to eat more of this!
