There is a Holley secondary metering plate conversion chart out there somewhere that shows the correct jets to use when replacing the metering plate with a metering block. For a Holley 3310, the conversion calls for 75 or 76 jets.
Most Holley's don't have/need a secondary power valve and you need a metering block for that anyway. But when the power valve is removed on the primary side for racing, the jet increase is usually about 8 #'s for double pump carbs. Other carbs may need smaller increases because the PVCR (power valve channel restriction) in the metering block is smaller. Holley has a formula for that too, but I never used it.
