I have been doing a little experimenting with the smoker again. I have been trying to make my own bacon. After a couple of tries I think I hit a home run. My wife even likes it and she usually doesn't eat bacon. This was just a 3 pound batch but after having some for breakfast I will be making more real soon. A big batch. The only thing I have noticed that you have to watch out for is, it cooks much faster than store bought bacon and crisps up fast. Are you ready for a photo? Unfortunately I don't have smellavision for you.

I've been making bacon in my cold smoker for a while. I also had this issue, with it almost burning when cooking. It did much better at a very low temperature and in a cast iron pan, turning it often. Love that homemade stuff!
