You cannot simply change to regular lifters from mushroom lifters. You have to change the camshaft too, because it is ground to a different, more aggressive ramp rate for the mushroom lifters.
That was the whole point. The mushroom cam was the forerunner of the roller. Much more aggressive ramps. So much so that more lifter face was needed to facilitate proper lifter to lobe contact.

Yes, in effect, I think you answered your own question. Is the mushroom cam and lifter set new and never run?

those things are roller cam performance at the cost of a solid cam price, why would you want to go backwards?
