Pressure regulator and gauge questions

I am switching from my Eddy 800 to a Holley 750 DP to get everything working on the Holley before I switch to the Holley E85 conversion in a few weeks. My Holley has AN fittings that my Eddy never got, so as I was thinking of the fuel line layout, I decided that this would be a good time to pop on a fuel pressure regulator and I always wanted a gauge. I have a couple questions.

1. What is a good quality, reasonably priced regulator? I would choose quality over price if need be.

2. Are there any good quality kits that come with gauge and regulator? I am only finding cheap $28 kits and I am not liking the off brand promise of quality.

3. What pressure do I need to run on a Holley 750 DP? I would assume around 4 psi but want a regulator that will cover a pretty decent range.
 
Mallory makes some good regulators.

Holleys don't need to run low pressure like ede's tend to require. Run it in the 6.5-7.5 range.
