So I swapped the old rear end for an 8.75, in doing so I off set the rear hangars a half inch on each side. Now I'm trying to figure out the best wheel/tire combo/back spacing and so on. This 73 Scamp will be primarily used for the strip. Any assistance would be greatly appreciated.
 
What he said, is this an A body 8 3/4 or another width? And is it BBP?

You should be able to fit up to a 275 wide tire on there. Given the application I’m assuming you want to stay with 15” rims, a 15x8 should work great. Backspace will depend on the width of the rear axle.

Yes I pulled the original 7.25 bbp rear end and replaced it with the 8.75 which was one in wider, thus I installed the offset hangars 1/2 outward on each side. Using a 1999-2001 Ford mustang rim 15x7 and a p195/60r15 I only have an 1and1/2 to the spring and 3/4" space from sidewall to edge of the well

Well I think I found my fubar, thanks to a sticky note on axle lengths fo Abodies vs B bodies I see the error of my ways. Sure the spring perches we're only off set 1/2" but the overall length of the 8.75 threw things off more than I accounted for. Mayhem shall be recalculating. Post outcome later.
