Setting choke

Last week we swapped an edelbrock 500cfm to a 1406 600cfm. What is the best method on setting the choke on the edelbrock performer carbs? Right now the little notch on the black wheel is near the middle. Seems like it takes a tad to long to warm up after sitting several days. What way do I turn the wheel to speed this process up?

Also wanted to know everyones method of starting their car after sitting for several days? I always give one full pump before turning the key. If it dosn't turn over then I have to keep on cranking and pumping to get it going. I know it shouldn't be like that. Should fire up instantly.
