Smoked 18 pounds of cheese....

I tried smoking cheese once, but the pipe just kept plugging up? JK, but I have a buddy who runs a smoker as well and damn is this stuff goooood! You just gave me the munchies.
 
How long to you smoke cheese, cause it doesn't need to 'cook' ?

It is for 2 people. I smoked 10 pounds of cheese for us on October 5th. Have about 2 pounds left. Omelets, tacos, enchiladas. Goes quick...

I would be more than willing to smoke cheese for anyone that is interested...couple simple rules...no bitching about the price of the cheese or the shipping. Simple as that. Wouldn't mind if you contributed a buck or two towards the pellets and vacuum sealer bags. Had an issue with the batch I smoked for someone on here with my vacuum sealing...but looks like I have that figured out...

love the stuff! don`t get it very often.
how do you stop it from melting w/ heat under it? low heat I presume ?!
 
No need to be sorry, it happens. Just gives us a reason to eat it faster!

it burns pellets. When I smoke cheese in the Big Green Egg I put it in bottom of the Egg. Put the fire grate on and pile the cheese on. Leave the exhaust wide open and open the lid slightly. In the Reverse Flow I just put that contraption in the firebox. Just have to watch the ambient temperature. Wife just informed me I need to smoke some butter...the closer to freezing the better for butter.
