68 Barracuda fastback with pearl white interior
seats, door panels and armrest are pearl white
door frame and rear trim panels (metal) black, dash black, rug black, and headliner black
What color should the sun visors be?
white or black

Not certain, but I would tend to agree with doug 371.
I have 68 Sport Satellite with maroon and white interior, in same color scheme as you describe in the Barracuda.
Sun visors match maroon headliner.

Are you trying to be "correct" or just asking for personal preferences?

Usual (sometimes unusual with Ma Mopar) rule of thumb is that they match UDFs, dash and everything above (pillar moldings, headliner, etc.) but of course, you can go any direction you want. What's nice us that the part(s) in question are easy to acquire/change out if one day you feel black and the next day white. Either way, have fun.

I should have said pearl white is correct of 68. I will fix it
I thought it should be black, But them I found a set of 68 pearl white visors for B Body so I was wonder if they were pearl white for Barracuda also.
I would like to see what other people think would look good.

Sun visors should match the headliner, or they will stick out like a turd in a punch bowl.
