what grit used to sand fibreglass

all personal preference, I like to start with 40-80 and work my way up.

so start with an 80 grit then go to 320?

80 to 180 to 220 to primer then sand out the scratches.

Just a caution, if the fiberglass has gelcoat on it try not to go through it. raw fiber glass will soak up any liquid and vapors and let paint peel. WEAR RESPIRATOR. Don't beath that stuff in, not even a little. If you want to Knock down high spots 60-80, smooth scratches 240-300. Good luck, Be Safe, you only get two lungs and need them both.

I like to start with 80 grit but if I come across old body work I use 36 to know that out and rough up the area

If you are going to skim over it with filler, just cut it to shape with 36 grit. Then skim it and shape the filler with 80, glaze it, then got to 150 and 220 then prime.
