I think the spring offset is the better, more permanent solution. But you need to be able to move the spring perches to do that which means welding. Technically it will change your roll resistance, but for a 1/2” per side it won’t make a big enough difference to worry about on a street car. On an AutoX or road race car you’d have to calculate the roll couple and see if you’re still where you want to be, but that’s the sort of thing you adjust with a sway bar. If you were doing a 3” relocation it would be more of an issue, but even then you can adjust with spring rates.
The spacers are an ok option, a 1/2” spacer is the maximum I’d run on just a plain flat spacer. More than that and you’d want to use the spacer/adapter style that has its own set of lug studs (spacer bolts to axle, wheel bolts to spacer). Of course to run a 1/2” spacer you’re going to need new, longer wheel studs. And for a 1/2” spacer I would make sure those are high quality lug studs. And check your lug nut torque on the regular, but that should go without saying.
