I bought a Traeger wood pellet grill a few years ago...hands down the best pit i've ever owned.

Those are neat but you don't need one...go back and look at my little red cheapo one that I got at home depot....just keep your coals and such on one side...I have this one that I don't pull out unless I plan on doing three briskets...

Right now it has chairs on the fire box...a radio on top..a vise attached to the shelf and a A/C hose crimper on the shelf also...can do three briskets...400 pounds, garanteed never to burn through...old timer is the brand...about 600 bucks...got it in Orange Texas...200 bucks cheaper than buying one in Houston...

Flatten a chicken breast....season with pepper and Tony Chachere's......

Add one link of Blue Ribbon sausage...I took the casing off and then sliced it into quarters..

Roll it up and add two pieces of Blue Ribbon bacon and secure with toothpicks...

Grill semi-direct heat with a little bit of mesquite chips....

Add some corn...an onion...a baked potatoe and sweet potatoe...

Damn that chicken looks great. You give me new ideas every time I check this thread.
That sausage in the middle kept that dry white meat from becoming dry...the bacon added it's great flavor and did some basting from the outside...the trick was to eat a piece of all three off them at the same time...wow...:drinkers:

I'm making the chicken tonight but in the oven b/c my grill ran out of propane. The wife is having a bad day so I thought i would whip up something different. She is excited. thanks for the idea.
 
Krogers had choice briskets on sale I got a good big one for 15 bucks....Claudes and Seven Spice also.....trimmed up and in the bag with the Claudes marinade...

Made four bottles of Carolina Red sauce..

1 1/2 cups cider vinegar
1/2 cup ketchup
1/2 teaspoon ground cayenne pepper
1 teaspoon salt
1 tablespoon sugar

trimmed a little fat off each one.....

then rubbed them down with seven spice....

smoke them tomorrow on my pit that I let my buddy use...he is having a party at his house on Sunday...
 
Here they are after several beers and six hours of smoking...still to do in the oven tomorrow for two to three hours at 250 degrees...nice and tender..
