Ya 500+ is out of my price range. Those ones have also been relisted for years without a bite. I offered that same guy 350 through ebay message... he said no... must not really want to sell them. The going price is 250ish. One actually turned up in the classifieds locally though, guy is asking...
I pretty much need a whole right side fender. Its messed up and the headlight bucket area has been pushed inward pretty bad. That fender also has evidece of previous repairs where they drilled holes to pull out the nose and then slathered filler on.

And yes both mixture screws respond similarly and will kill the engine slowly when tightned down.
My main problem is stumble, hesitation... you may have hit the nail on the head. I have a hose running from my distributor vaccum advance to a fitting just under the choke. Are you saying this is hooked into the wrong spot? I just bought the car recently so I have no idea what the PO might have done
I did the choke test. Closing the choke fully will kill the engine. I closed it at least halfway and it did not make any noticiabale difference. More hesitation. The car still shakes at idle and the first 15% of acceleration is rough. Also i don't know if this is just how the car is supposed to...

When I start to screw in the mixture screws the car begins to stumble and at a certain point the engine will die once they are turned past a certain point.
