Going on a 76 Volare roadrunner, PO had put on rear 235 x 75 x 15 so size is not important except to be correct and safe for the rim. Will a 245 x 60 or 70 series be OK????

I have 255 60-15's on 15x7's. Pushing the limit but they work A-OK

I have seen that chart before, I have to say it is way conservative.

Just look at the tire manufacturer's recommended specifications for the tires you want to run. That chart doesn't list the profile series, so it can't be that accurate. What tire fits on what rim is very dependent on how tall the sidewalls are, the taller the sidewall is the wider the tire can be for a given rim width.

This is for BFG T/A's, according to BFG with the T/A's you could run a 255/60/15 on a 7" wide rim. That may not be true for all tire brands/models, but it would still be in spec for the BFG T/A's. A 245/60/15 would be fine, although a 15x7" is the narrowest rim recommended for those.

TireRack publishes the manufacturer specs for all the tires they sell. The charts are specific to each brand/model of tire, the one I posted was for BFG T/A's just because with the larger sizes there aren't many options. But it's not uncommon to see the same size tire in a different brand/model have recommendations that are different by a 1/2".
 
This 76 volare has big openings so I can put some tire back there, not that a 76 318 needs much tire!!! It already has new 205-70-15 up front ( yep on 5 inch wheel) so trying to stay about level. So a 245-60-15 would be bout that.
I have always ben told, a car needs to ride bout level on the highway, although Mother Mopar had the 70 TA-AAR which came with If I remember right G 15 in back and what E 15 up front, 2 tire size different. I had a few back in late 80's and they handed fine ( for an E body! ) It needed that rake for the side exh. tips no doubt.
 
Mine rides and drives just fine. I didn't have the front end aligned just put 15's on the back and kept 14's on the front. To properly align mine I would need more positive caster. something Mopars are short on. As long as it drives straight and I can let go of the wheel and it doesn't pull I'm ok. I was going for the look.

I like that rack look, but to a limit! I am considering a side exh like the aar-t cars. These f bodies have a problem in 76 with dual exh and the tank of that yr., so some rake helps that.
 
The up hill photo and camera angle adds to the rake. Same combo, not so much in this photo.

Fit and correct are two different things. Kids put 205/45/18's on a 10" wide rim with positive offsets so they get them to clear their slammed, overly cambered, stretched fender rice bucket so they can get that deep dish look. If you have room for a wide tire then you have room for a the proper matching and fitting width rim.
 
A 275 60 15 will fit just fine on a 7" wheel. The minimum recommended width is 7.5, but I've done it several times. That 1/4 on either side ain't gonna hurt a thing. That first chart is just plain wrong.

Can you spot me $300 for some 8 inch rims!!????? ha . I don't any more in 4 tires a 2 new rims than I have in the entire Volare Roadrunner!!!!!! That ain't hemi Cudas ya know!
