I would go with a set of flat tops for your intended use. With stock port J heads I would keep the max lift to around .500” or so.

That's the cam I have in my 340. Has about 11" of vacuum at idle. Here is a sound clip at 900 rpm idle. But mine has manual brakes.

The one thing to watch out for on a 340, is the lifter bores. If you decide to go with hydraulic roller lifters, make sure to check the top of the lifter bores and make sure they don't have too much taper.
