Assuming a properly tuned 340 sitting in traffic, does anyone know how hot those headers get about 2"-3" out from the head? I do not like how close the power steering hose and brake likes are from the headers I just put on my Dart.

Sitting in traffic at idle is the least of your heat worries. They run cherry red under load and at speed. My guess is that would be 1,200 to 1,400 degrees F.

if you don't have enough advance there will be too much fire in the heads instead
of the cylinder and you will have cherry red headers.
Lots of light load advance gets your mixture burnt in the cylinder and your heads / headers won't be so hot.

Header wrap will definitely keep underhood temps down but be careful - the wrap has a tendency to let moisture buildup in the tubes once the car is turned off. Headers will rust from the inside out over time (a long time, I admit, but still...)
