I'm going to be welding on a set of spring perches on an 8 3/4 with super stock springs. What is the best pinion angle? Don't want to use shims. Car is a Dart Sport. Thanks

How are you going to use it?

If it's a drag car at least -6

According to the MP Chassis Book, 5-10 degrees Nose Down, but 5-7 is preferred.

Street car, IMO, don't go more than -5.

Anywhere from -3 to -5 works ok. the more angle the more wear on your u-joints and potential for vibration.

I'm welding the perches on an empty case. Can set this up on the bench with the face where the 3rd member mounts set at 90* then set my perches at -5*? Thanks

Not without getting the actual measurements.

The perches normally point the nose up 5* from the factory. If you swung it the way you want, it will be a change of 10* from factory, which is a bunch. If you want more nose down on the actual pinion angle, you don't want to install them to factory spec. They can be all over the map.
